I agree, cleaning and trimming fresh artichokes can often be a little intimidating. But once you know how to do it, you will see how easy it really is. Fresh artichokes can be fairly dirty if you ask me.

So a good clean is what you need before you start cooking them. That is why some people like to give them a good soak first in a lemon water bath. This helps to loosen any trapped in dirt or bugs in between those tough green leaves.

Globe Artichokes vs. Baby Artichokes

The large green artichokes are also called globe artichokes.

The edible parts are the artichoke heart or bottom, the stem and the softer part of the leaves.

Baby artichokes need less cleaning and don’t have a fuzzy inside. The inside leaves are much softer and will become tender and absolutely edible when you cook, braise or pan fry them.

Are you looking for a yummy appetizer bite or a super savory summer side dish? You will just adore these delicious pan fried artichokes in homemade cilantro mayo! And this one is also so easy to prepare.

You can make this dish with frozen artichokes if you don’t find fresh artichokes. In my recipe I show you how to thaw them perfectly to get that golden caramelisation afterwards. However I would not use canned or marinated artichokes because those will not crisp up enough, which really makes or breaks this appetizer here.
