Plus, making them yourself means you can have them whenever you want, without a trip to the store.   • Devil food's cake mix
  • Water
  • Oil
  • Eggs
  • Unsalted butter
  • Powdered sugar
  • Marshmallow fluff
  • Vanilla

How to Make Copycat Suzy Qs

Prepare cake according to instructions on the box (or use your favourite homemade devil's food cake recipe)

While the cake cools on a wire rack, prepare the filling.

Mix butter, powdered sugar, fluff, and vanilla, on high speed until nice & fluffy.

Cut the cooled sheet cake into rectangles. If your cake had a large rise, cut off a thin layer to make it even. Or you can use this nifty cardboard trick!

Cover half of the rectangles with filling. Using a cake spatula, like this one, really helps a lot here!

Cover with the other half.

Sprinkle on a little powdered sugar, if desired.

What is a Suzy Q?

Suzy Q's is the name of a popular packaged snack cake from Hostess, sold in the United States. I never saw them in Scotland and don't know if you can buy them outside of the U.S.

This chocolate snack cake has two parts – a delicious, moist Devil's food cake outer layer and the sweet, fluffy Marshmallow fluff inside.

And you know what the best part is? We're making the devil's food cake from a box! That's right, no need to make homemade devil's food cake as the boxed version will give you that Suzy Q flavor you love.

Even more important than the cake is the filling.

It's simple but perfect. Spread that between two layers of cake and you have your homemade Suzy Q that's just as good as the storebought.

How To Store Homemade Suzy Qs?

These Hostess copycats should be stored in an airtight container. I recommend putting wax paper between them if you need to stack them.

What is the difference between devil's food cake and regular chocolate cake?

Devil's food cake is the richer, darker, more chocolatey version of your traditional chocolate cake. It's considered the chocolate angel food cake because it's so light and fluffy but still has a rice chocolate flavour.

What's the difference between marshmallow fluff and marshmallow creme?

Marshmallow creme and marshmallow fluff are similar and can be used interchangeably, however, there are some slight differences that can affect the texture of your final product. Marshmallow creme has creme of tartar and xanthan gum, while fluff does not. Marshmallow creme is made with a continuous mixing process while fluff is a batch-whipping process.

Marshmallow creme is great for no-fail fudge recipes, but I prefer Marshmallow Fluff for this recipe. If all you can find is creme, you can either order some marshmallow fluff from Amazon or use creme. Just know the texture and taste will be slightly different.

What if I don't like a thick cake?

If you prefer a thinner snack cake (or a higher filling to cake ratio), you can make the cake on 2 sheet pans instead, reduce the cooking time, & then cut each into 8 rectangles. You'll be able to make twice as many snack cakes, but they won't have as thick of the chocolate cake – which I've discovered most of my house prefers anyway. Win-win!

If you want to get that rounded edge from the store-bought cakes, you can use a mini loaf pan. I haven't tried this yet, so cannot provide a cooking time though.

Ingredients

For the Cake:

  • 1 box Devil's Food cake mix
  • 1 cup water
  • 1/3 cup oil
  • 3 eggs

For the Filling:

  • 1 stick of butter
  • 1 1/4 c. powdered sugar
  • 1 1/4 c. marshmallow fluff
  • 1 tsp. vanilla
  • powdered sugar for dusting (optional)
