This is a family-friendly and low-carb casserole that everyone loves. Who doesn’t enjoy cheesy and creamy chicken topped with crunchy toppings? This recipe is the definition of comfort food.

In fact, this recipe is super-mild, which is good news for anyone that doesn’t like spicy foods. If you want this casserole to have a bit more kick to it, I suggest adding some paprika and jalapeno peppers to it. You can also sprinkle in some hot pepper jack cheese too.

Even though I love to find the history of different recipe names, I can’t find this one. I found million dollar chicken, but my casserole is not the same as that award-winning recipe someone created for Pillsbury.

A quick Google or Pinterest search for recipes like mine will bring up million dollar chicken, which sounds the same as millionaire chicken, but they are kinda different.

Originally, million dollar chicken was a new twist on chicken and waffles, made with peach preserves and Worcestershire sauce. You can even still watch Oprah’s reaction to this recipe.

Since then, food bloggers have tweaked and changed it. I still think my recipe makes you feel like a millionaire! If you like creamy chicken, then this is for you. The heavy whipping cream, sour cream, cottage cheese, and parmesan cheese combine to make the most incredible combination of flavors.

Easy Keto Chicken Casserole

Save yourself time and just pick up a rotisserie chicken from the grocery store. Then, all you have to do is shred it, mix everything together, and bake it! It’s a really easy last-minute dinner idea.

On the side, I suggest making some low-carb green beans and bacon. They will add color and delicious flavor to your plate. Or serve some keto loaded ranch roasted cauliflower. It is overflowing with tons of taste – you will enjoy how perfectly it goes with this casserole.

How To Freeze Casseroles

This casserole is the perfect thing to make ahead and freeze for later. I love freezing casseroles because then all I have to do later is heat up the oven and bake it! No prep, no worries.

Here’s how to freeze it. Add the ingredients to a freezer-safe casserole pan (I like to use the disposable aluminum casserole pans that come with foil lids). Seal it really tightly to keep any cold air out. Label it and bake it within 6 months.

When you are ready to eat it, just bake it like normal. Check the internal temperature to make sure it is completely baked in the middle before taking it out of the oven.

If you search for million dollar chicken casserole, you’ll probably find recipes that use Ritz crackers as a crunchy topping. On the keto diet you can’t use Ritz crackers. Instead, I used pork rinds.
