- Bagged Frozen Popcorn Chicken – If you can’t find popcorn chicken you could use nuggets or tenders and cut them into smaller pieces. Shredded rotisserie chicken works great too. You can also try making your own baked homemade chicken nuggets.
- Mashed Potatoes – This is a great way to use up leftovers! If you’re in a pinch, you could also buy the premade mashed potatoes from the deli section of your local grocery store. Just heat according to package directions.
- Brown Gravy Mix – If you have leftover gravy (like from this chicken and gravy recipe, you can also use that!
- Garlic Powder and Onion Powder – This is added to the gravy mix for more flavor. If you’re using leftover gravy, then you won’t need these.
- Frozen Corn
- Shredded Cheddar Cheese – You can swap in another shredded cheese, as well!

Popcorn chicken is similar to chicken nuggets, but chicken nuggets are often made with ground chicken while popcorn chicken is made from smaller pieces of chicken breast that has a crispy breading.

- Corn – For extra flavorful corn, add a tablespoon of butter before heating in the microwave. You could also heat your corn in a small pan on the stovetop. Add a few tablespoons of water and put a lid on over medium heat, stirring occasionally until heated through.
- Make it Spicy – For a spicy kick, you can use your favorite hot sauce to top the bowl or to toss the chicken in when it comes out of the oven.
- Baked Casserole Version – You can make this into a casserole by placing all of the mashed potatoes in a greased casserole dish, topping with the chicken, corn, and cheddar cheese, and broiling just until the cheese is bubbly. Then either drizzle the whole thing with gravy or let each person put gravy on their individual portions.

Ingredients
- 24 ounce bag of frozen popcorn chicken
- 1 recipe homemade mashed potatoes kept warm
- 2 .87 ounce packets brown gravy mix
- 2 ¼ cups cold water
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1 cup frozen corn
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
Cook popcorn chicken according to package directions.
In a small saucepan add the gravy packets, garlic and onion powders, and a pinch of black pepper. Whisk in the water and bring to a boil over medium high heat. Boil for one minute. Taste to adjust seasoning. Remove from heat, and set aside.
Place the corn in a microwave safe bowl with a tablespoon of water and cover with plastic wrap or a microwave safe lid. Microwave for 1 – 1 ½ minutes, or until heated through, stirring once during cooking. Toss with a pinch of salt.
To serve; spoon about 1 cup of mashed potatoes into the bottom of a bowl. Top with 6 oz of the chicken, a few tablespoons of shredded cheese, ¼ cup of corn and drizzle with gravy. Garnish with fresh chopped parsley if desired.
