Ingredients

  • 3 medium Baking Potatoes
  • 1 tablespoon Apple Cider Vinegar
  • 2 tablespoons dried Parley
  • 1/2 tablespoon dried minced Celery Flakes
  • 1 medium Red Onion minced
  • 2 tablespoons chopped Dill Pickles or Dill Pickle Relish
  • 2 tablespoons chopped Sweet Pickles or Sweet Pickle Relish
  • 1 tablespoon Mustard
  • 2 tablespoons Sugar
  • 1 1/2 to 2 cups Mayonnaise to taste
  • 1/4 to 1/2 teaspoon Celery Salt (Be extra careful adding the celery salt - it can quickly overpower a dish.)
  • Salt and freshly ground Black Pepper to taste
  • Paprika to top

Instructions

  • Bake the potatoes, using any method you like, until done.

  • Wrap backed potatoes in foil and set aside to cool.

  • In a small bowl, add vinegar, parsley and celery flakes. Set aside to allow the parley and celery flakes to rehydrate.

  • When potatoes are cool enough to handle, remove the peeling with your fingers. Discard peeling.

  • Chop potatoes into cubes.

  • Place potatoes cubes into a medium bowl.

  • Add minced onion, pickles, mustard and sugar. Toss to mix well.

  • Add prepared vinegar mixture. Toss to mix again.

  • Add mayonnaise gradually, stirring to achieve the right consistency.

  • Taste. Add celery salt, salt and pepper, to taste.

  • Leave in mixing bowl or place in a serving bowl.

  • Sprinkle with a little paprika.

  • Place bowl, covered, in the refrigerator, for at least 2 hours to chill and allow the flavors to blend, or until ready to serve.
