It may be old fashioned, but that doesn’t mean it isn’t tasty. My favorite egg salad recipe came from an old cookbook called The Frugal Gourmet Whole Family Cook Book. Their version is old fashioned, just the way I like it.

I love this old fashioned egg salad recipe, which is also called boiled egg salad for many reasons. The ingredients are simple when making egg salad sandwiches, which means I always have everything on hand to make them; no special ingredients taking up space in the cabinet.

The second thing I love about classic cold salad recipe is that it’s very economical. For just a couple dollars, you’ll have lunch on the table.

  1. Hard boil eggs using your favorite method. Drain well. (I boil mine in a large pot on the stovetop; however, the instant pot method works too.)
  2. Peel hard boiled eggs, and roughly chop.
  3. In a medium bowl, mix chopped eggs, mayo, minced onion and fresh chives (optional). Taste, and season with salt and black pepper.
  4. Eat as an easy egg salad sandwich or with crackers.
