Raise your hand if you never make lasagna because you think it’s too difficult. Come closer, my friends. Allow me to let you in on a few secrets so that you can learn the easiest way to make lasagna for your family and for guests!
Ten years ago when I first launched my website, this was a recipe I included in my first cute little eBook series. I’ve since taken these eBooks out of my shop and shared most of these recipes on my blog. But somehow, I failed to ever share this recipe for The Easiest Lasagna!!
Awww. Remember these? Precious memories.
Until now. In celebration of 10 years of blogging, it is a must that I finally tell you my secrets for making the easiest lasagna on the planet. Forgive me for waiting this long. Your life will be better now that you can make lasagna with so little effort. Your family will be so happy!
Trick #1: Do not cook the lasagna noodles ahead of time. Simply lay the dry noodles in the pan and layer them with the sauce and cheese. Drizzle about 1/2 cup of water over the lasagna before baking and cover with foil. The water will cook the noodles while it bakes.Easy!
Trick #2: Stir the cottage cheese into the sauce instead of working in vain to spread it onto the noodles as you create layers in the pan. This makes no difference in the taste, but it sure does alleviate a challenging step in the lasagna-making process!
Trick #3: When making one lasagna, for the love of all things simple, make two or three. It takes no extra effort to do this! Then you can put the extra lasagnas into your freezer to effortlessly bake another day!
3 cups shredded cheese (our favorite is Colby jack but you can also use mozzarella)
⅓ cup water
Instructions
In a large pot, cook hamburger meat with onion. Drain grease if necessary.
Stir in pasta sauce and salt.
Remove from heat and stir in cottage cheese.
Lay ⅓ of the lasagna noodles (uncooked) to cover the bottom of a 9x13 inch baking dish.
Pour ⅓ of the sauce mixture over the noodles and spread to cover the noodles.
Sprinkle ⅓ of the shredded cheese over the top.
Repeat these layers twice more.
Drizzle ⅓ cup water over the lasagna.
Cover tightly with foil.
Bake for one hour at 350 degrees.
I can think of no better time to make this Easy Lasagna recipe! This is a fabulous meal to have in your freezer during these busy holiday weeks. In addition, Lasagna is a wonderful meal to feed guests! Get your ingredients rounded up, and crank out some Lasagnas!!
If you’d like to watch a video of me making three lasagnas, here you go! See how easy this is!
Now, can anyone tell me why Lasagna is spelled with a “g” in there? I may have figured out ways to make this dish simple, but I have yet to learn why it is spelled so silly.

Chopped fresh rosemary, thyme, or sage would all be delicious in addition to the basil in this homemade lasagna. Add more cheese: If you like an extra cheesy topping, feel free to double the amount of mozzarella on top. Also, feel free to add in any other cheeses that you love too.
Cover the baking dish with aluminum foil. Bake in the preheated oven for 30 to 40 minutes. Remove the foil and bake until cheese is golden brown, 5 to 10 more minutes. Remove from the oven and let stand for 10 minutes before cutting and serving.
Generally, lasagna has about 3 or 4 layers of pasta, with sauce, ricotta cheese, mozzarella, béchamel, and sometimes meat or even meatballs or sausage between those layers. Our many layer lasagna has around 12 layers of pasta, or even more depending on how thin you end up rolling the dough.
Start by spreading a layer of your tomato-based sauce (either a plain tomato sauce or your pre-made ragù) on the bottom of your dish. Next, add a single layer of pasta sheets. Then, add a layer of white sauce, followed by another single layer of pasta sheets.
Turn the oven on to 350ºF so it can preheat while you're assembling the lasagna. Once the lasagna is ready, cover the pan with a layer of aluminum foil. Place the pan in the oven and allow it to bake for 30 minutes, then remove the foil so the cheese can brown.
A thin sauce runs right off of cooked lasagna noodles, causing all the layers to slide off of each other, as well. A thick sauce, meanwhile, almost acts like a glue that holds the layers together, resulting in a dish that slices into neat squares.
Don't start layering noodles until you have some sauce underneath, whether it's meat sauce or marinara. The sauce acts like a barrier between the noodles and the pan, so that the noodles don't stick to the bottom of the pan as they bake.
Well, you don't make any “g” sound in lasagna, but it does influence the pronunciation — because it's Italian. Pretend there is no “g.” Then the word would be pronounced “la-sa-na.” With the “g,” it is pronounced “la-zan-ya.” There has been a lot of discussion about this one line, of this one song, on this one album.
Add egg and parsley: a basic ricotta mixture calls for 16 ounces of whole milk ricotta, one egg, and a couple tablespoons of parsley. For extra creamy ricotta, add in an extra egg, a handful of grated parmesan, and a quarter cup of shredded mozzarella.
Use vegetables like carrots, onions, and celery for flavor plus lots of garlic and herbs. If making a meat sauce, brown and season the ground meat before adding the tomatoes.
There needs to be a balance of salt, sweet and acid. Think good to great tomatoes, fresh lemon juice, lemon zest, herbs like thyme, oregano and basil will increase taste experience, and remember the ground pepper. Season the ricotta with salt, pepper, lemon zest, fresh basil, some lemon juice to balance the salt.
At that point you can add spices, add additional meat to the filling (e. g. browned ground beef or pork) grate some fresh mozzarella over the top, and put it back into the oven, uncovered, to finish it off. Put some olives, onions, and chopped tomatoes on top under another layer of cheese.
A good tomato paste helps to thicken but also adds a sweet and savory umami flavor. Lean Ground Beef: Lean beef adds a robust and hearty meatiness that's essential in a classic lasagna recipe.
