We love pancakes and all kinds of pancakes. Gluten-free oatmeal pancakes, healthy carrot cake pancakes, coconut flour pancakes, cottage cheese pancakes, and everything in between.

Why only 3 simple ingredients? Many people who need an allergen-friendly pancake recipe have made these 3 ingredient almond flour pancakes and LOVED them.

Today we are sharing a Fit Foodie pancake favorite and they’re only made with 3 ingredients! Not only are these almond flour pancakes easy to make, but the taste amazing and the consistency is also cake-y and delicious.

What you need

Here’s what you need for these simple almond flour pancakes:

  1. Blanched almond flour:Almond flour is essentially just ground almonds, which makes this flour grain-free. Make sure to specifically use blanched super-fine almond flour and you will get the best results. We recommend Bob’s Red Mill.
  2. Eggs: Eggs are an important part of this recipe as it will help bind the almond flour and banana and make them cake-y like…pancakes! Plus, they add a ton of protein.
  3. Banana:Banana adds a wonderful all-natural sweet flavor to these pancakes that make these cakes taste just like classic banana pancakes.

Almond Flour Pancakes Q’s

When it comes to almond flour pancakes (or any grain-free pancake recipe), you have questions! There are many things to consider when making pancakes, especially if you have specific dietary needs. Don’t worry, we’ve got you covered:

Can I replace regular flour with almond flour?

No, you cannot substitute almond flour for all-purpose flour (or any kind of flour for that matter). Almond flour absorbs liquid quite differently than glutinous flours, so if you would like to use all-purpose flour I would find a recipe that calls for that specific flour.

Is almond flour high in carbs?

No! Almond flour is one of the healthiest low carb flour options on the market. In 1/4 cup of almond flour, there are about 6 grams of carbs.

Is almond meal the same as almond flour?

They are essentially the same thing, but typically almond flour is more finely ground making it better to bake and cook with.

What is the difference between blanched and unblanched almond flour?

Blanched almond flour uses blanched almonds. Blanched almonds mean that the darker, outer shell is removed and you are left with a shiny, cream color almond! Unblanched just means that a whole almond was used.

Can you freeze almond flour pancakes?

Yes, you can freeze almond flour pancakes. Let pancakes cool completely. Then, tightly wrap pancakes with tinfoil and remove as much air as possible. Store in the freezer for up to 3 months.

How do you reheat frozen pancakes?

To prepare the almond flour pancakes after they’ve been frozen, pop them in the toaster or in the microwave and enjoy!

Are almond flour pancakes gluten free?

Yes! Almond flour is naturally gluten-free. Just be sure to check and see if the almond flour you buy is certified gluten free if you are celiac and you’re good to go.

Can you make almond flour pancakes vegan?

We do not suggest replacing the eggs for a vegan option as there are only 3 ingredients and eggs are a big part of this recipe.

I think I can reduce the sugar a little since I don’t like sweet things. Does that affect the taste when eating? I will consider this

FAQs

Why can't you use baking powder with almond flour? ›

Since baking powder contains baking soda, baking powder cannot be used in almond flour baking. Instead, eggs (or applesauce or bananas) can be used as the leavening agent to help baked goods rise and achieve a light and fluffy texture.

What is the healthiest flour to use for pancakes? ›

To make healthy pancakes, use whole-wheat or another whole-grain (cornmeal, oats or buckwheat) flour instead. Whole-wheat flour has 16 grams of fiber per cup compared to 3 grams of fiber in white flour.

What flour substitute is best for pancakes? ›

Almond and coconut - This is the best tasting combination - most of the top-rated gluten-free pancake recipes have a blend of almond and coconut flours. They work well together because while almond flour doesn't absorb liquid well, coconut flour does, which leads to lighter, fluffier pancakes that hold together well.

How many carbs are in an almond flour pancake? ›

Lower-Carb Pancakes: To make low-carb pancakes with almond flour skip the maple syrup. That drops the total carbs to 6 grams with 2 grams of fiber, so 4 grams of net carbs per pancake (based on this recipe).

What are the disadvantages of almond flour? ›

Almond Flour Is High In Oxalates

The problem with a high intake of oxalate-rich food is that it might contribute to calcium oxalate crystal formation, which, is a major component to some kinds of kidney stone. Also, it's been implicated in gout, and also has been associated with microcrystalline-associated arthritis.

Is there a trick to baking with almond flour? ›

The Basic Baking Guidelines

Our chef prefers to add a little xanthan gum or cornstarch to the almond flour to help with the texture, though it is not entirely necessary to do so. Almond flour is pretty forgiving in that regard. Some use arrowroot powder to achieve a similar effect in their bread recipes.

How to substitute almond flour for all-purpose flour? ›

While there is not an exact conversion number, on average ¾ cups of traditional flour is likely converted at a 1:2 ratio of 1 ½ cups of almond flour. Almond flour can carry more moisture than traditional flour, therefore, you may need to add more of it to a recipe to prevent watery batter or dough.

What flour is best for gut health? ›

What flours include prebiotics and fibre for gut health?
  • Buckwheat – a source of resistant starch and polyphenols.
  • Rye – a source of arabinoxylan, beta-glucan, galactooligosaccharides, fructooligosaccharides, resistant starch and polyphenols.
  • Sorghum – a source of arabinoxylan, resistant starch and polyphenols.

What is the best use of almond flour? ›

Almond flour is versatile — its nutty flavor and delicate texture work beautifully in all kinds of cookies, cakes, and breads. It can also be used as a gluten-free breading or coating for fried or baked foods. You can also use it as a thickening agent in soups, stews, and sauces.

What tastes better, coconut flour or almond flour? ›

Coconut has a more generic, slightly sweet flavor, while almond flour (unsurprisingly) has a distinct almond taste. These characteristic flavors can sometimes be great — they can be delicious in cookies, pancakes, mug cakes, and keto bread recipes. However, sometimes the recipe tastes better when we mask the flavor.

Why do my homemade pancakes taste like flour? ›

If you skipped on the flavoring or butter that might be called for in the recipes, you could also have tasteless pancakes. Bland pancakes often mean you can taste the flour and nothing else.

Is almond flour actually keto? ›

Almond flour is a 100% keto-approved baking flour. It is also the most widely used keto flour on shelves. However, what it lacks in carbs, it makes up for in calories. Though almond flour is significantly higher in calories than many other flours, it also contains considerable amounts of protein and fiber.

Which is healthier, blanched or unblanched almond flour? ›

Blanched almond flour is lighter and is much better for creating pastries. Because the almonds are white in color (having had the skin removed), the ground up flour will not make a difference to the appearance of your dish. Blanched almond flour also carries the same nutritional benefits as unblanched almond flour.

How many net carbs are in 2 tablespoons of almond flour? ›

In 2 tablespoons of almond flour, you'll get 80 calories, only 2 grams of carbs, 3 grams of protein, and 1 gram of dietary fiber. While coconut flour is a better source of dietary fiber, iron, and potassium, almond flour does contain iron (2% Daily Value) and calcium (2% Daily Value).

Why is almond flour so hard to bake with? ›

I don't recommend trying to bake with the almond flour straight out of the freezer. The high moisture and fat content will make it very clumpy and hard to work with.

How much baking powder to use with almond flour? ›

Add extra leavening to offset the density of almond flour. ¼ – ½ teaspoon of baking powder, baking soda, or combination of both will help. Use less liquid in the recipe since the flour adds more moisture.

What happens if you bake almond flour? ›

Almond flour adds flavor in the form of very mild sweetness (not enough to negatively affect savory recipes), and a certain richness. Baking with almond flour extends the shelf life of baked goods by adding fat, which helps retain moisture.

Can you bake with almond flour just like regular flour? ›

Almond flour is a little more moist than wheat flour, and doesn't have quite the same binding qualities. You'll do best to substitute 1:1 to begin with, as many recipes respond well to this direct replacement. But be prepared to add more almond flour as you go to compensate for the wetter batter.
