    The Fluffiest Pancakes Ever

My family is obsessed with eating pancakes! I’ve published a bunch of homemade pancake recipes of different varieties over the years because they’re the best breakfast. Pillowy, warm pastries, that are easy to make, layered with butter and maple syrup – what’s not to love?

The secrets in this recipe will have you making stack after stack of amazingly fluffy pancakes. There are a few key ingredients and how-to’s when mixing the batter that you’ll need to know about. Once you’ve mastered the easy technique, you’ll never have to suffer through under cooked or thin pancakes ever again!

What Makes These Pancakes So Fluffy?

There are actually 3 important tricks that make these pancakes come out so perfect:

    1. The first is getting your batter just right. It shouldn’t be too thick or thin, and not over or under mixed. Reaching that middle spot is like finding gold! The best pancake batter has been mixed just until the wet and dry ingredients have just come together. You’ll see a good amount of bubbles when the batter is ready. There will be lumps in the batter, but that’s a good thing! It means the batter hasn’t been over or under mixed and the pancakes will turn out fluffy.
    2. The second biggest secret is using one whole tablespoon of baking powder! This may seem like a lot, but the other ingredients have been measured to be perfectly balanced and create your new favorite fluffy pancakes.
    3. And finally, sifting the dry ingredients before mixing everything together. By sifting your dry ingredients, you are ensuring everything is perfectly light and airy before you start combining the batter. I know it’s an annoying step, but it is an important one!

    • Baking powder

    How To Make Pancakes

The only tools you need in this pancake recipe is a bowl, a whisk, and a non-stick pan or griddle. These tools will make the cooking process easy and help you execute flawless pancakes every time.

Here’s how to make fluffy pancakes:

Mix The Dry Ingredients: In a large bowl, sift together the flour, baking powder, salt, and sugar.

Add The Wet Ingredients: Make a well in the center of the dry ingredients and add in the milk, vanilla extract, egg, and melted butter. Whisk until smooth, being careful not to over mix. The right consistency should have some lumps and bubbles.

Prepare For Cooking: Heat a griddle or a large non-stick frying pan over medium heat. Add a little butter, oil, or cooking spray.

Cook The Pancakes: Pour ¼ cup of batter onto the heated pan or griddle and cook until bubbles appear on the surface (about 2 minutes). Flip with a spatula and cook until browned on the other side (about 1-2 minutes).

    Tips for Success

    • If your batter is too thick to pour, add a teaspoon of milk at a time until it has thinned out enough.
    • If your batter is too thin, add a teaspoon of flour at a time until you’ve reached the right consistency. Be careful not to overmix.
    • Use a low to medium heat to cook the pancakes. You’ll know the griddle or pan is the right temperature when a droplet of water sizzles when dropped on the heat. If your pan is too hot, your pancakes will cook too fast on the outside and be raw on the inside.
    • Butter the pan when you are cooking the pancakes. This helps them not to stick, but also adds flavor!
    • Use whole milk! This is important for the overall taste. The added fat in whole milk makes these pancakes perfect.
    • Sift together the dry ingredients. I know this is a little bit of annoyance, but it is so worth it to make fluffy pancakes! It’s a key step that you do not want to skip if you want your pancakes to be fluffy!

How to Store and Reheat Leftovers

Homemade pancakes are so easy to store. Keep them in a plastic bag or airtight container in the fridge for up to 3 days. Reheat in the microwave (or very lightly in the toaster!) and enjoy!

You can also freeze them! When I freeze homemade pancakes, I make sure and place a layer of parchment paper in between each pancake. This will keep them from sticking to each other once frozen. You can thaw them overnight in the fridge or microwave them straight form the freezer!

    Serving Ideas

Pancakes are best served fresh and warm with a dollop of butter or a drizzle maple syrup. You can also top these fluffy pancakes with fresh berries or bananas, Nutella, peanut butter, or whipped cream if you’re feeling adventurous!

Make a complete meal by serving them with a Dalgona Coffee, Overnight Breakfast Casserole and perfectly cooked bacon in the oven!

    FAQs

What makes pancakes more fluffy? ›

To get that extra loft, stir a few tablespoons of mayonnaise into your protein pancake batter along with the egg and the oil. And don't worry about tasting the mayonnaise in the finished pancake—unless you're using an unusually strong-tasting brand, the only evidence of its use will be a supremely fluffy flapjack.

What ingredient in a basic made from scratch pancake batter makes pancakes fluffy? ›

Baking powder: Baking powder acts as a leavening agent, ensuring perfectly fluffy pancakes. Salt: Salt enhances the overall flavor of the pancakes, but it won't make the pancakes taste salty. Milk and oil: Milk and oil add moisture and flavor to the pancake batter.

Which is better for pancakes, baking soda or baking powder? ›

Adding baking powder is the easiest way to make fluffy pancakes. There's more than one way to make the bubbles that make a pancake fluffy, but the easiest way is by adding a raising agent such as baking powder.

Why are restaurant pancakes so fluffy? ›

The secret to fluffy restaurant style pancakes? Buttermilk! The acid in the buttermilk reacts to the leavening agents in the pancake batter, creating air bubbles that make the pancakes tall and fluffy. It's a simple switch that makes all the difference.

Can I use mayo instead of eggs in pancakes? ›

"The oil in mayonnaise helps moisten the recipe and acts as an adequate substitute for the liquid an egg would have added." It also does a bit of leavening, since mayonnaise is made from eggs and is already emulsified.

What substance makes batter fluffy? ›

    Baking Soda

It's used to chemically leaven doughs and batters when it is mixed with an acid. Combining baking soda with an acid produces a chemical reaction that releases carbon dioxide gas which causes the food to expand and become fluffy. Think about light and airy pancakes. That's the baking soda at work.

How does Gordon Ramsay make pancake MiX? ›

    Gordon Ramsay's recipe

You will need 2 eggs, separated, 2 tbsp sugar, ½ tsp salt, 2 tsp baking powder, 60g vegetable oil, 300g buttermilk, 160g plain flour, and 1 tsp vanilla essence. Whisk the egg whites “*ntil foamy”. MiX all the other ingredients in a second bowl, then fold in the egg whites.

What does adding an extra egg to pancakes do? ›

Eggs are a crucial ingredient. They provide the cakes with the structure to hold light bubbles. Eggs also give the batter additional, richer flavor from the yolk fat. If you add too many eggs, you'll have “pancakes” that look more like custard or crepes.

What makes pancakes rise and be fluffy? ›

Pancakes and waffles typically both contain baking soda, which causes them to rise. As soon as the baking soda is combined with the wet ingredients (which contain an acidic ingredient, like often buttermilk), it starts producing carbon dioxide gas bubbles that cause the batter to rise.

What happens if you add milk instead of water to pancake mix? ›

Instead of water, you can use any kind of milk, including almond milk and coconut milk, to mix up the pancake batter. Some Makers prefer the flavor of our pancakes when you use milk instead of water. Using milk will cause the pancakes to become a darker color. Can you add an egg to pancake mixes?

Does adding more baking powder make pancakes fluffier? ›

Baking powder (double acting) provides two rises: The first occurs when the baking powder comes into contact with a liquid, the second when it's exposed to heat. Too much baking powder will create a very puffy pancake with a chalky taste, while too little will make it flat and limp.

What causes pancakes not to be fluffy? ›

Making pancake and waffle batter ahead of time is a huge no-no and will lead to flat, dense results every time. Even letting your batter hang out for just a few minutes after you've mixed it before you start ladling it onto the griddle will lead to less fluffy results.

What makes pancakes more dense? ›

In pancakes, gluten forms strands that give the cake its structure. But too much gluten results in a pancake that is dense and gummy. The dry ingredients are rounded out with just a bit of sugar and malted milk powder, baking powder, salt, and baking soda.

Why does buttermilk make pancakes fluffy? ›

    Buttermilk Makes Fluffier Pancakes

Buttermilk is a staple ingredient for bakers because its acid reacts with baking soda, inflating the dough or batter with carbon dioxide. But buttermilk doesn't just help create those air bubbles; it helps retain them, too, especially in an application such as pancakes.
